Bruenner Kolach

for 6-8 pieces

150 ml milk
25 g butter
25 g sugar
20 g fresh yeast
300 g flour
1 egg

2 tbsp honey Honig
125 ml milk
125 g poppyseeds
25 g raisins
zest of ½ lemon

Place milk and sugar in a saucepan, lightly heat and melt the butter in it. Allow to cool a little (the mixture should be slightly warm) and rinse the yeast. Mix well.

Sift the flour in a bowl, make a hole in the middle. Add the yeast mixture and egg and prepare a smooth dough. Let it rise.

On a floured working surface, knead the dough once again, add flour if necessary. Roll out and cut into square.

For the filling dissolve honey in a warm milk. Add poppyseeds, raisins (soaked in water for 15 minutes) and the lemon zest.

Spread the filling on the dough squares, beat the corners over each other and squeeze together. Brush with whisked egg white and bake at 180 °C until ready.
