Buchteln with plum jam

10 g yeast
100 ml milk
1 tbsp sugar
1 tbsp wheat cake flour

250 g wheat cake flour
50 g sugar
1,5 egg yolk
1/2 egg
1 pinch of salt
50 g butter
grated zest of 1 lemon

butter for the baking pan
plum jam
powdered sugar



Prepare a poolish with yeast, lukewarm milk, 1 tbsp of sugar and 1 tbsp of flour. Add all other ingredients for the dough, except butter and lemon zest and mix. Add the melted butter and grated lemon peel and knead the dough until it is smooth. Let it grow up to a double size in a warm place.

Divide the dough into approx. 10 pieces and form into balls, press flat with the fingers and put some plum jam on each piece. Form the dough pieces into the balls again and dip in melted butter, then place in a baking pan. Let it rise again. Bake at 180 degrees for about 25-35 minutes. Serve sprinkled with powdered sugar.
