Cheese soup from Bregenzerwald

1 onion (ca. 75 g)
40 g butter
25 g flour
100 ml white wine
850 ml vegetable broth
275 g Bergkäse, ground
chopped herbs
nutmeg, ground
salt, pepper


Chop the onion and fry in butter. Add the flour and roast for a short time. Add white wine and broth. Bring to boil and cook for 7-10 minutes, then finely puree.

Add grated cheese (not all at one time!) and let it completely melt. Season with fresh herbs, grated nutmeg, salt and pepper.
