Crescent-shaped nut biscuits

Time: more than 1 hour
Category: Pastries
Complexity: medium

g wheat flour
20 g fresh yeast
100 ml warm milk
120 g butter of room temperature
30 g sugar
2 egg yolks

250 g grated walnuts
1 tbsp breadcrumbs
1 tbsp honey
120 g sugar
1 pinch of cinnamon
30 g raisins
20 ml rum
125 ml of hot milk

1 egg yolk
1 tbsp milk

Sift flour, make a hole in the centre and crumble yeast into it.
Pour warm milk over it and stir. Sprinkle with flour and leave for about 15 minutes.

Add remaining ingredients and make a dough. Cover with a damp towel and leave for another 15-20 minutes.

For the filling mix all ingredients except milk. Pour hot milk over mixture and mix well again.

Knead the dough, roll it out in a "sausage" (about 3 cm in diameter) and cut into small pieces (about 4 cm each). Roll out each of them to get the circle. Put in some of the filling, twist and form into crescent.

Mix yolk with a tablespoon of milk and cover the biscuits. Leave to dry for 40 minutes.

In a oven preheated to 180 °C bake until tender about 25-30 minutes.
