Rhubarb and brioche gratin

for a mini baking pan 25x20 cm

200 g brioche

300 g rhubarb
3 tbsp sugar

200 ml milk
200 ml cream
4 eggs
50 g sugar
icing sugar
zest of 1 lemon, grated


Slice brioche. Peel rhubarb, cut into small pieces and mix with sugar. Let it rest for 30 minutes, then strain.

Brush the baking pan with butter. Place the brioche slices and rhubarb pieces in it.

Mix milk with whipped cream, eggs, sugar, pinch of salt and grated lemon peel. Pour over the mass and bake at 180 degrees for about 30 minutes. Serve sprinkled with icing sugar.
