Soup with semolina dumplings

50 g ham
40 g butter
1 eg
2 tbsp chopped parsley
40 g ground hard cheese
70 g semolina
salt, pepper

1,5 l beef broth
1-2 carrots cut in strips


Cut ham into small squares. Butter of a room temperature crush with a fork, beat the egg, add the butter and stir. Pepper, salt and season with freshly ground nutmeg. Add parsley, grated cheese and semolina.

In a large saucepan, bring water to boil. With two tablespoons form dumplings, lower into boiling water and cook for about 15 minutes at medium temperature - the water should not boil until they are cooked! Remove from the water and give a little dry.

Serve with hot beef broth, with carrot strips cooked in it. One can also sprinkle soup with parsley.
